3 ingredients are all you need for this pizza dough. Homemade pizza dough made without yeast - Greek yogurt is the secret ingredient to this crust. Mix flour, greek yogurt, and salt in a bowl. Roll out with a rolling pin and bake in the oven for 10 minutes, then top with your favorite pizza toppings and bake again. Greek yogurt offers a wonderful chewy texture to this crust. It will have you floored the moment you eat it! Easy to make, simple to do, and the taste is out of this world!

Listen, we love homemade pizza night around here! It is something we do often and is one of our go-to Friday at-home date night meals. We go fancy sometimes with ricotta fig and prosciutto pizza or keep it simple with our favorite, sausage and banana peppers. It is all good!

While hanging out with one of my good friends doing a shoot for Fueling a Southern Soul, we were talking about food and dinners we like to make regularly and she told me about how she used Greek yogurt to make pizza dough and how much her family loved it. I thought it was the weirdest thing and I didn't believe her until I tried it. But oh my gosh, she was right!

She literally uses just 3 ingredients. When I finally tested it myself that same week I couldn't believe how simple, easy, and delicious this was. I was floored!

All that is required is to mix equal parts flour and Greek yogurt, and a pinch of salt for flavor. Both full-fat or non-plain plain Greek yogurt can be used (feel like this is obvious here but make sure it's plain and not flavored - that definitely wouldn't result in a great-tasting pizza haha). Mix it in a bowl, roll it out on the counter with a rolling pin, and bake in the oven for 10 minutes to partially bake. Then you top with whatever toppings your heart desires, bake again, and wahlaa! You can have homemade pizza in under 30 minutes.

No yeast, no rising time, none of the hard time-consuming things. Anyone can do it! It sounds too good to be true but let me show you how simple it is! This makes for the perfect meal for a date night at home, a homemade pizza dinner party - have the dough prebaked and let everyone top it with their favorite ingredients or for a quick weeknight dinner

About the Ingredients

  • Flour - I use King Arthur all-purpose white flour for all of my baking needs. However, any brand of white all-purpose flour will work.
  • Greek Yogurt - I have used both full-fat and nonfat Greek yogurt for this recipe. We usually have the nonfat version in the fridge always so I tend to use that the most. Just make sure it is a plain flavor, whatever fat percentage you use, and not flavored like vanilla or anything.
  • Salt - this adds just a little something something to the flavor. You can technically make this with just flour and yogurt, but I like to add a pinch of salt to boost the flavor profile a bit after I tested and made this myself.

Recipe Tips

Another reason this recipe is one of our go-to's and favorites is that is a super easy ratio to remember...

It is ONE part flour to ONE part Greek yogurt and 1 teaspoon of salt per part. For example: 2 cups flour + 2 cups plain Greek yogurt + 2 teaspoons salt.

It is so easy to remember and easily adaptable depending on the number of people you are making it for. 2 cups of flour +2 cups of yogurt will give you 4 smaller pizzas and feed around 6-8 people. So you can adjust accordingly very easily depending on the number of people you are feeding.

3 ingredient pizza dough on a floured counter top cut into quarters Combine the flour, yogurt, and salt in a bowl. Once the dough is mixed, kneed on top of a lightly floured counter for 1-2 minutes or just until it has all come together. Cut into 4 equal pieces.

This is a more "wet" dough than a traditional yeast recipe, so lots of flour on the counter will be needed to make sure it doesn't stick to the surface and the dough itself is no longer sticky.

If you want to prep this ahead of time or freeze there are a couple of different options I have found helpful.

  1. Freeze partially baked crust - follow the directions up until baking.
    You will bake the pizza crust for 15 minutes instead of 10. This will bake the crust almost all the way. Remove from the oven and let cool. Once cooled, wrap the baked pizza crust tightly in plastic wrap 3 times still on the cookie sheet (this helps keep it flat and from breaking), ensuring no air can get to the crust. Store in the freezer for up to 6 months. When ready to use, remove from the freezer, top with toppings, and bake at 400 for 10 minutes until the cheese is melted.
  2. Freezing pizza dough - wrap the ball of pizza dough tightly in plastic wrap a couple of times and place it in a freezer-safe ziptop bag. Store for up to 6 months. When ready to use, place in the fridge for 24 hours to thaw. Proceed with the recipe as directed from there.

  • 2 Cups Flour
  • 2 Cups Plain Nonfat Greek Yogurt
  • 2 Teaspoons Salt

Instructions

  1. Preheat your oven to 400 degrees.
  2. In a large bowl add in all of your ingredients.
  3. Stir with a wooden spoon until the dough is almost all come together.
  4. Generously flour your countertop and pour the dough on top. Knead the dough (with clean hands) for 1-3 minutes until the dough has come together and no longer sticky. This is a wet dough and will require lots of flour on the counter to make sure it doesn't stick.
  5. Shape the dough into a round ball and cut it into 4 equal pieces.

  7. Flour your surface again and begin rolling out one of the smaller portions of dough. Roll into a rectangle shape about 12" long and 6" wide. Repeat with the remaining individual dough balls.

  9. Carefully pick up and transfer to a baking sheet lined with parchment paper (or if you do not have parchment paper, generously spray with non-stick spray and lay on top). This is a delicate dough. If it breaks when you lift it, use your fingers to press it back together on the tray. It will bake up just fine.
  10. Bake for 10 minutes.
  11. Remove from the oven and then top with your favorite pizza toppings. Place back into the oven for 10-13 minutes. Bake until the cheese is melted, hot and bubbly, and the crust is slightly golden brown around the edges and on the bottom.

Notes

  • This recipe makes 4 pizza crusts. Each crust will feed 1-2 people. This recipe is easy to half or double. It is just equal parts flour and greek yogurt (ex: 1 cup flour 1 cup greek yogurt) with 1 teaspoon salt per cup of flour used.
  • Full fat or 5% fat plain greek yogurt can be used as well.

    Love this crust. The texture/simplicity and taste. However we couldn't get it fully crispy is there a trick? Thank you

      It doesn't really get "crispy" per se. It has a more chewy texture to it. You can make it as thick as you would like, just cook it 10ish minutes longer if it's really thick to cook all the way through. hope you enjoy it! I really love the different more chewy texture of it - especially with the ease of this recipe!

    Can you freeze left over dough balls?

      Yes! Just wrap tightly in plastic wrap a couple time and freeze for up to 6 months. To thaw, place in the fridge for 24 hours then lay on the counter for an hour or so to bring to room temp.

    Can you use Oat flour in place of the flour?

      I have never used any other flour other than King Arthur white all purpose flour so I am not sure. It would definitely change the texture and taste since oat flour has a different gluten structure than regular flour. Worth a shot in seeing if it works or not but I am unsure if it will turn out - definitely wouldn't be the same. Thanks for asking!
