DS1 is definitively not rollslop because rolls are as viable as blocking, and occasionally parries are clearly the best answer for certain enemies. It creates different problems for the player and you are meant to do more than roll at the right time in response. Rolling consumes significantly more stamina in DS1.
DS3 is rollslop because the entire game and boss roster was built around dodge rolling. Elden Ring is just soulless garbage.

Demon's Souls bosses aren't designed to be hard, they're designed in a way that you can figure out how to beat them while you're fighting them and are sharing a space with them. Once you figure out that you need to hit the Adjudicators wound it's an easy boss, and even before that it is easy, but you can't beat it yet, you have to avoid it and observe its quirks to figure out what's going on. And no, this is not some super high IQ puzzle, but it makes you feel much more like an adventurer than prescribed roll slop gameplay. But this is literally not a conversation anyone is ready to have. Demon's Souls and to a large extent Dark Souls worked off of things being intuitive for the player. The large towering Taurus demon moves at a speed that its size would suggest. The Gaping Dragon has a turn radius of an airplane, just like its body would suggest.
Meanwhile in later titles you now have giant fricking Dragons like Bayle that can nothing personal dash all over the place or shit like Scadutree Avatar that can charge around at sonic speeds for some fricking reason. Nothing is intuitive anymore, everything is just about rote memorization. Your intuition and adventure senses are not of any help anymore when tackling a boss, you just gotta die and eventually roll to victory over and over again. The roll is also a good example of this, because of originally it was supposed to suggest that you dodged a weapon swing or swipe of an attack, but now we have arrived at a point where you can roll through literally explosions, which means the games have become a parody of themselves and the universe now acknowledges that your character is not dodging while rolling, but actually momentarily invincible.
I will never forget my first fight against the Tower Knight. The impact of being surrounded by archers everywhere and a boss which I couldn't damage. Admittedly, I first tried it, but had to break three weapons to kill it since I realized that his head was his weak point too late. Easily the most memorable souls fight I had.
I think the key problem with rolling in elden ring is that nobody thinks about the direction they roll only timing.
You usually get fricked by harder boses if you roll backwards.

Rolling into enemies because their underside is a blind spot will always be fricking stupid no matter how you frame it.

Shouldn't ER be one of the only fromsoft games that isn't rollslop? There are a lot more ways to negate or deny damage that are effective that isn't rolling compared to other Souls games. Jumping is actually really good a lot of the time for instance.

jumping doesn't even work against certain ground AoE attacks because their hitboxes inexplicably extend vertically, you just have to watch any high level player doing their moronic challenge runs to see they maybe use jumping 10% of the time the other 90% is spent rolling

I've used jumping a lot for bosses that have sweep attacks or attacks close to the ground, but that's not the only thing. Shield are a lot better in this game, you can just use shields to tank and poke and do damage using guard counters, and you can put ashes of war on shields for parrying magic attacks if you need. Some bosses have good enough hitboxes that you can stay close and sidestep attacks, and in some cases just crouch. You can make full tank builds where you just give yourself a billion poise and high damage negation using perfumes and such and you just never need to roll. I've never tried it, but I'm guessing lifesteal is probably decent as well? Not too certain about that though. Meanwhile DS games are just all rolling and rolling and shields are decent.

DS3 started this with lots of fast enemies so you had to roll like crazy, and it continued in ER and got exaggerated to absurd levels since almost all bosses are idiotic 90000 combo fights, and especially before you learn boss' moves you basically try to dodge at the right time so you spend 90% of the fight rolling
